Lemon Raspberry Ice Cream Sandwiches
These Helping of Happiness desserts are super cute to serve on the 4th of July. The lemon cookies you can make ahead, and it takes just a few seconds to scoop the ice cream onto them when you’re ready to eat. Kids love the sprinkles, and it’s so nice to have a cool treat on a hot summer day! Happy Independence Day!

Lemon Raspberry Ice Cream Sandwiches
Ingredients:
lemon cookies (our recipe below)
homemade vanilla blue bell ice cream
roman raspberry talenti sorbetto
patriotic sprinkles (linked up below)
Directions:
Lay the lemon cookies out on a flat surface like a cookie sheet.Dump out 2 TBSP or so of the sprinkles on to a plate. Spoon about 1 TBSP of raspberry sorbetto onto the cookies. Then layer with a scoop of vanilla ice cream. Carefully, grab another lemon cookie and smash it on top until the ice cream starts to squish out the sides. Now that your cookies and ice cream have created a sandwich, roll the exposed ice cream onto the sprinkles.

Lemon Cookie Recipe:
Ingredients:
1 1/2 cups sugar
1/2 cup margarine or butter (softened)
1/2 cup shortening
2 eggs
1 TBSP lemon juice
2 1/3 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
DIRECTIONS:
Heat oven to 350 degrees. Mix 1 1/2 cups sugar, margarine or butter, shortening, lemon juice and eggs. Next, stir in flour, cream of tartar, baking soda and salt.
Roll dough into 1 1/2 inch balls. Then put the remaining 1/2 cup of sugar into a small bowl, and roll dough balls in the sugar until they are coated.
Bake in the oven for 8-11 minutes. Let cool completely before using them for ice cream sandwiches.
