Peach Salsa
Summertime always makes me think of peaches. When I was a kid we had 2 peach trees in our yard, so we spend a good chunk of July canning. I didn’t love the work, but I loved the smell as the peaches simmered away. This peach salsa is a little bit sweet, with some kick to make it delicious to put in tacos, on top of grilled chicken or on nachos.

Peach Salsa
Ingredients:
3 fresh peaches, peeled and diced
1 tomato, diced
1/4 red onion, chopped
1/2 jalapeno, finely chopped (leave the seeds in for more heat)
1/4 cup fresh cilantro, chopped
juice from 1/2 lime
1 TBSP rice vinegar
1/2 TBSP sugar
3/4 tsp salt
1/4 tsp pepper
fruit fresh (a few dashes)
Directions:
Put the peaches in a bowl and sprinkle with fruit fresh. This will keep the peaches from turning brown. Sprinkle with sugar. Then add the remaining ingredients and stir together.
This is really delicious with our Rio Pork Tacos, or our Salsa Chicken.
