Greek Salad
This is a great lunch salad for me. It’s very quick to make, and stays with me longer than your typical garden salad. It’s also great because half of the ingredients come from a can, so they are easy to have on hand whenever you’re in the mood. Plus, I love the Mediterranean flavors and textures. Delicious and simple!

Greek Salad
Ingredients:
romaine lettuce
black olives, pitted
avocado, sliced
chick peas, drained and rinsed
cucumber, peeled and diced
red onion, sliced
feta cheese
pepperoncini
My favorite dressing to use on this is the Olive Garden House dressing. A balsamic vinaigrette would also be delicious.
