Mexican Shrimp Skewers

Mexican Shrimp Skewers
Ingredients:
12 oz frozen large raw shrimp, peeled and deveined- thawed
1 zucchini sliced
12 button mushrooms
1/4 red onion, sliced into large chunks
bag of mini bell peppers
vegetable oil or olive oil for drizzling
rub:
1 TBSP ground cumin
1/2 TBSP garlic powder
1 tsp salt
1 tsp chili powder
1/2 tsp pepper
garnish:
1/4 cup cilantro, chopped
juice from 1 lime
Directions:
Take shrimp, zucchini, mini bell peppers, onions, and mushrooms and put onto skewers. Drizzle with cooking oil.
Combine the rub ingredients in a small bowl, then sprinkle over the skewers. Put the skewers on a hot grill, medium high heat (this will go quicker on an outside grill). Cook for about 5 minutes on each side, until the shrimp are cooked and vegetables are fork tender.
Take off and drizzle with lime juice and sprinkle cilantro over the top. Enjoy!
