Mexican Style Corn on the Cob
Corn on the cob is one of my very favorite summer vegetables. I think I could eat it with every meal. I love this recipe because the flavors are subtle but elevate this simple side to something amazing. This is delicious served along side our Easy Cheesy Beef Enchiladas, Homemade Beef Taquitos or Salsa Chicken.

Mexican Style Corn on the Cob
Ingredients:
6 corn cobs, husked
1/4 cup Mexican table cream
3 TBSP butter
1 tsp chili powder
1/2 tsp lime zest
salt and pepper to taste
Directions:
Put corn in a large pot, cover with water. Bring to a boil. Boil for 5 minutes. Pull the corn out and place on a plate or baking sheet. Rub butter over the cobs. Drizzle with table cream. Sprinkle remaining ingredients on top.
Serve warm. Enjoy!!
