Pear Pecan Salad

This is the kind of salad I could eat every day and never tire of it. It’s sweet, salty, crunch, soft, a little bit of stinky cheese twang- love it. It’s delicious with regular pecans, or candied pecans- whatever you have on hand! It’s vegetarian and gluten free. All around a healthy dish that tastes fabulous.

Pear Pecan Salad

Ingredients:

lettuce: half romaine and spring mix

pears, sliced or diced

avocado, diced

carrot, sliced

pecans, candied or plain, chopped

feta cheese, crumbled

red onion, just a touch, sliced thin

Briana’s Poppyseed salad dressing

Directions:

Toss together and enjoy! If you’re going to make it ahead, put everything together but the pears until the last minute so they don’t turn brown and mushy.
