Banana Pancakes with Spiced Apples & Peanut Butter Drizzle
We have a few different elements going on in this recipe. We’re going to have 4 different layers.
Let’s Start with the Pancakes themselves!
Pancakes
Ingredients:
2 bananas (with brown spots is best!)
1 cup complete pancake mix (we use usually use Krusteaz or the Great Value Fluffy Pancakes)
1 cup water
cooking spray or butter to prevent sticking
Directions:
Mix together:
For a smoother pancake, mash bananas by themselves first.
For a chunkier pancake, blend bananas, water and complete pancake mix all at once.
Heat skillet or frying pan to 350 F degrees. Give a quick spray with the cooking spray and then scoop pancake batter into 4 inch pancakes.
Once pancakes have lots of bubbles and are starting to turn up at the bottom, flip to the other side (pancakes should be golden brown). Cook for a minute or so until pancakes are golden on both sides.
Take off heat and set aside on a plate. You can be working on your apple topping while the pancakes are cooking, if you want.
Spiced Apple Chunky Syrup
Ingredients:
2 apples, chopped
1/4 cup brown sugar
1/4 cup butter
1 TBSP lemon juice
1/2 tsp cinnamon
1/8 tsp cloves
Directions:
Put chopped apples, brown sugar, butter, lemon juice, cinnamon, and cloves into a skillet on the stove at medium heat. Cook for about 5 minutes, stirring occasionally. Take off heat.
Toppings
Ingredients:
whipped cream
1/3 cup peanut butter
Directions:
Put peanut butter in a small microwave safe bowl. Heat for 30 seconds. The peanut butter should be a thick liquid consistency.
Now Put it all together:
Start with the banana pancakes, then spoon on the spiced apple chunky syrup. Drizzle peanut butter over the spiced apples, then top with whipped cream. SOOOOOOOO delicious!! Enjoy!!!
