Melon Watercress Salad with Citrus Honey Vinaigrette
I have fallen in love with melon salads during the summer time. They are absolutely delicious, healthy, cool and refreshing after a day in the heat. I always feel like I’m eating at a fancy restaurant when I eat this salad. You can make the dressing ahead of time, and chop up the melon so it’s easy to toss together right before you eat. Our family really loves eating this along side our Garlic Herb Chicken and Roasted Yellow Squash with Basil & Parmesan.

Melon Watercress Salad with Citrus Honey Vinaigrette
Ingredients:
3 cups, chopped or balled watermelon
3 cups, chopped or balled cantaloupe
3 cups, chopped or balled honey dew melon
3 cups watercress, roughly chopped
1/2 cup Citrus Honey Vinaigrette (below)
1/4 cup feta cheese
8 mint leaves, chopped
Directions:
Toss together and serve. These ingredients are great to prep before hand, but don’t combine them until you are just about to eat or it gets a bit soggy.
This is also really tasty to serve along with our Pretzel Rolls. The salty roll with this sweet salad is amazing.
Citrus Honey Vinaigrette
1 cup Italian dressing (I like the Olive Garden House dressing- low calorie or regular)
1 TBSP honey
1/4 cup fresh orange juice
1/4 cup fresh lemon juice
1/8 tsp tarragon
kosher salt to taste
pinch of pepper
