Sweet BBQ Bacon Quesadillas

This recipe was born on a busy school night. We were rushing off to a school performance and church meeting just after piano lessons. I had intended on making our BBQ Chicken Quesadillas, but realized just before making them that the chicken had gone bad in the fridge that I had intended on using.

So we improvised and cooked up some bacon really quickly, threw it all together and it ended up being very tasty and fast. I hope this can help you on a busy day as well. I think my kids like these even better!!

Sweet BBQ Bacon Quesadillas

Ingredients:

cooked bacon, crumbled

shredded sharp cheddar or colby jack cheese

handful of cilantro, chopped

green onion or two, chopped

flour tortillas

BBQ sauce (we use our homemade sauce from our ribs recipe- so good!)

Directions:

These directions are super simple. Grab a frying pan or electric skillet (the large skillets are awesome for doing a big batch at the same time). Heat it up. Place the tortillas on the pan or skillet. Spread a small spoonful of BBQ sauce on a tortilla. top with cheese, green onions, cilantro and bacon. Flip it after just a minute or so (when the cheese is melty, but before the tortilla burns). Pull it off the heat and dinner is served!! Throw that on the table with a bagged salad and some fruit and you’ve got 5 food groups covered, and dinner has just been prepped in minutes.

Quesadillas are a quick and easy stand by over here- usually served with salsa. I really like the smokiness the BBQ adds. Sweet, tangy and delicious! Another thing I really love is that you can prep the bacon, sauce and cheese ahead of time, so you pretty much just need to warm it up.
