Greek Chicken and Quinoa Salad

This salad is packed with protein and really fills you up. So many great nutrients in this dish! First off- the chicken. I like to make it in the pressure cooker (AKA Instant Pot). Here's how I do it: Pressure Cooker Chicken
Now for the salad, you can use the pressure cooked chicken, a rotisserie chicken from Costco, grilled, sauteed or whatever chicken you have hanging around.
Greek Chicken and Quinoa Salad
Sliced Chicken Breast
Mixed baby greens
hummus (our recipe here!)
1 cucumber, diced
1 carrot, peeled and sliced thin
1 cup grape or cherry tomatoes
1/3 cup quinoa, cooked (I just make mine in the rice cooker)
1 bell pepper, diced
1/4 red onion, sliced
4 mushrooms, sliced
avocado, optional
olives, optional
Dust with some fresh mint leaves
Briana's Blush Wine Vinaigrette - to taste (link below)
Toss everything together except for the hummus. I like it dropped on top in dollops.
A little tip: If you have leftover salad, that doesn't have dressing in it, store it in a Tupperware container with a paper towel in it to preserve freshness without getting soggy.
