Homemade Beef Taquitos
beef roast
1 jar green salsa (Herdez is our favorite)
1 jalapeno
1/2 cup water
sprinkle of garlic salt
sprinkle of pepper
juice of 1 lime
shredded cheddar cheese
*flour tortillas
cooking spray (I use the kind with canola oil from Costco)
(*you can use corn tortillas instead of flour for a gluten free option- just fry them up in oil first so they don't fall apart when you roll them)
Instructions:
Put beef roast, salsa, water and jalapeno in crockpot. Sprinkle with garlic salt and pepper. Cook on low for 8 hours. At end of cooking time, shred the beef with a fork. Squeeze juice of a lime over the top.
Grab your tortillas and put a little bit of beef and a little bit of shredded cheese inside. Roll up tight. Stick on a greased cookie sheet or glass pan. Continue to fill tortillas and place in a single row. When finished, spray with cooking spray.
Bake in a 400F degree oven for 15-20 minutes or until the edges are turning brown and crispy.
We like these dipped in guac, sour cream or ranch dressing. Enjoy!!
