Whole Wheat Oatmeal Pancakes

I know the trend everybody is really into is the low carb diet these days. But our bodies, and our children's bodies still need really healthy carbs in our lives. There are nutrients they provide us like fiber, B vitamins, phytochemicals, vitamin E, antioxidants and lots of minerals, plus they give us great energy. I love this recipe because it is packed with all that good stuff.
Whole Wheat Oatmeal Pancakes
1 cup wheat berries (or wheat kernels)
1 1/2 cups milk
1 tsp lemon juice
Pour these in a blender and blend on high for a few minutes until they are pretty smooth.
Next, add these into the blender:
2 eggs
1/4 cup oatmeal
2 TBSP honey or brown sugar (I'm going to try molasses next time!)
2 TBSP vegetable oil
1 1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
Blend for about 30 seconds. If you have time, let it sit for about 10 minutes. This is usually the point where I get some eggs or bacon started, or even getting the toppings ready.
Pour onto hot griddle or frying pan (about 375 F degrees)
They cook pretty quick. Turn them over when they get bubbly on top and the sides start to pucker and curve a bit.
Our favorite toppings:
whipped cream
apple butter
maple syrup
nutella

I love this recipe because I don't have to grind the wheat into flour before I use it. It's the best when I can skip tedious steps like that! Super easy and very healthy for you and your family.
