Oatmeal M&M Brookies with Chocolate Drizzle

I am a huge fan of pan cookies- or “brookies” as we like to call them. They are cookies, pressed into a pan like brownies. I love them because they taste like a cookies, but it saves me the time of rolling them into balls. This recipe is great when you need to serve a large group.

Oatmeal M&M Brookies with Chocolate Drizzle

3 cups quick oats

2 1/2 cups flour

2 cups brown sugar

1 cup butter, softened

2 eggs

1 tsp vanilla

1 tsp baking soda

1/2 tsp salt

3 TBSP peanut butter powder (I use PB2) - optional

1 1/2 cup M&Ms (I used the peanut kind)

2 cups chocolate chips (divided)

1 1/2 tsp shortening (leave for last step!!)

Directions:

Cream together sugar and butter. Add eggs and vanilla, mix. Add dry ingredients (except M&M's and chocolate chips) and mix again. Now add in 1 1/4 cup chocolate chips and the M&M’s. Press about 2/3 of the batter into a jelly roll pan (a cookie sheet that has a lip around all edges), or a 9x13 glass pan will work, too.

Bake at 350 for 12-15 minutes. While your brookies are cooling, work on the chocolate drizzle. Put 3/4 cup chocolate chips and the shortening in a microwave safe bowl for one minute. Stir out the lumps. If you need to put it in again- just do 20-30 seconds at a time until it is melted and smooth.

Let the brookies cool for about 10 minutes, then drizzle the chocolate over the top. Voila!! They’re done and delicious!!
